CERPTA is a research center that works with both conventional preservation technology as well as new technologies to improve the nutritional and sensory characteristics of food.

One part of the center’s research includes the design and production of functional foods and the use of technologies which allow bioactive components to be protected so that they can be added to products, avoiding damage from the technological processes of preservation.

CERPTA’s lines of research are:

Stability and quality control of food.

Application of traditional technology to improve quality and the nutritive value of the processed products.

Application of new technologies to improve food safety and organoleptic and nutritional characteristics.

Pathogenic and altered microorganisms in relation to hygiene and food safety.

Incorporation of fiber optic sensors to improve the control of food processing.
